Häagen-Dazs x Liberty London – Ice Cream Sandwich

Last week Häagen-Dazs launched a gorgeous collaboration with Liberty London and it’s one of my favourite summer duos… ever! It’s a limited edition collection called ‘Little Gardens’ and the flavours consist of Lychee Raspberry Rose and Apricot Lavender. (How amazing do they sound!) the packaging is just as special as the ice cream itself. Jardins de Babylone, a team of botanical artists from Paris designed the absolutely beautiful packaging. It’s almost like a watercolour painting. So pretty! Well, I managed to get my hands on some of these exclusive tubs and I decided to create my very own ice cream sandwich! (These are the easiest home made cookies ever!)



Ice Cream Cookie Sandwich


  • 250g butter or margerine, softened
  • 250g brown sugar
  • 2 eggs, beaten
  • 360g self raising flour
  • 200g chopped white chocolate or white chocolate chips
  • 2 Scoops Häagen-Dazs Lychee Raspberry Rose or Apricot Lavender
  • Sprinkles, Icing Sugar, Berries etc for decoration.

  1. Preheat the oven to 190 C / Gas 5. Line a baking tray with parchment / greaseproof paper etc.
  2. Mix together the butter and sugar until smooth and creamy. Add the beaten eggs and mix well.
  3. Sift in the flour and then fold into the egg mixture. Mix in the white chocolate and then spoon the mixture onto the baking tray. Leave enough space for the cookies to spread.
  4. Bake for 12 to 15 minutes until slightly soft to the touch and golden. Leave for a few minutes before moving.
  5. Once the cookies have cooled down, smooth the ice cream on to the bottom of one cookie, add another cookie on top, creating your sandwich.
  6. Decorate however you desire!

What’s lovely about using the Häagen-Dazs Lychee Raspberry Rose is that the soft floral notes really work well with the crunchy buttery cookie. There’s nothing like home made cookies and really great quality ice cream. Ice cream sandwiched are super easy to make and so quick. They are a winning crowd pleaser for adults and children, just make sure you have some napkins to hand!
