Aruba Aruba – Easy BBQ Jerk Wings

If you’ve been following me on social media lately you might notice I’ve been doing a fair bit of travelling. I’ve been to Wales, Amsterdam and Canada to name a few with a couple more places lined up. One of my dream destinations that I’m working on however is the magical Caribbean Island of Aruba. So while I can’t quite get there yet I’ll opt for enjoying and celebrating some of my favourite food. Aruba’s cuisine has been influenced by more than 90 nationalities! (pretty impressive) but the tastiness and spice that runs through the caribbean islands is a key part of the flavour.

I was sent a great Caribbean food hamper which included some of my store cupboard faves as well as a great cookery book called Caribbean Modern with recipes from the rum Islands written by Shivi Ramoutar. It’s a really vivid, evocative book that really does show you some home style caribbean cooking. I took a little inspiration from the book, some bits from the food hamper and created a family favourite of mine. Home made BBQ jerk wings. I did cheat by using a ready made BBQ sauce and jerk marinade, but I’m not ashamed of that… it still tastes fab! Whether you have it as a starter, snack, finger food or as a main meal the flavour is reach and deep with a mega pack of heat (if that’s your thing!) Plus, it’s one of the easiest things to cook ever.

Easy BBQ Jerk Wings

Homemade easy jerk BBQ wings

Ingredients

Approx 150g of BBQ sauce (more depending on the size of your wings)

3/4 Tablespoons Jerk Seasoning

Juice from 1/2 Lime

Scotch Bonnet or other Chilli

Chicken Wings

Method

Mix all the ingredients together and coat the chicken wings completely. Feel free to add more or less ingredients depending on how you like your wings. I like mine saucy with a kick, you might prefer yours drier, so add less sauce or milder so leave out some of the jerk and peppers. Marinade over night preferably, or for as long as possible. Pop in the oven for 3o minutes and then for the last 10 minutes pump up the heat to get the wings a little crispy.
