I love a good take away. Why? Well, don’t be surprised when I say it’s not because of the taste. (Grease alert!) It’s more to do with how quick and easy it is. With both myself and my boyfriend working full time it can easily be 7pm before we get home and then the thought of cooking a meal from scratch – YAWN! If we haven’t already prepped it, then it’s a massive struggle. We both love tasty and fresh food (who doesn’t) but sometimes time is just too short. Well, I’ve been challenged to create a quick and tasty far eastern dish that isn’t the same old boring stir-fry. This recipe took me less than 30 minutes from start to having my dinner on the table. Fresh, low fat and seriously tasty.
Chinese BBQ Stir Fry
Ingredients:
Blue Dragon season and stir fry Chinese BBQ kit
400g chicken (or pork)
Blue Dragon Medium Egg Noodles (1 nest per person)
Red and / or green pepper
Spring Onions
Mushrooms
Oil
Sesame Seeds (optional)
Instructions:
- I love this Blue Dragon seasoning kit because it’s half dry and half wet. It basically means the meat is super tasty. Long gone are the watery stir-fries! Firstly, pop your meat in a freezer bag along with the dry sachet of seasoning. (I put it in a freezer bag because it’s quicker than using a bowl and less washing up – time is precious!) Mix the chicken with the seasoning until fully coated and leave to one side to marinade.
- While the meat is marinating, pop a non-stick pan on the hob and heat up until it’s smoking. Add water to a pan and bring to the boil. While the above is going on, chop your vegetables. By the time you’re finished the pan should be hot so add a splash of oil and cook the chicken until golden brown.
- Add your egg noodles to the boiling water while the chicken is cooking. These take 5 minutes.
- Once the chicken is brown, add your veggies. Cook for a couple more minutes. While these are cooking, take your egg noodles out, rinse in cold water and serve up on the plate.
- Add the second Blue Dragon sachet of thick and tasty BBQ sauce to the meat and stir in for a minute or so until heated through. (This smells so good!)
- Serve and add a sprinkling of Organic Sesame Seeds Black.
- Eat!
I told you it’s seriously quick and easy. I used 2 pans in total and this stir-fry is one of the tastiest I’ve made. The dry seasoning gets the chicken really tasty and the wet part of the kit is sticky BBQ sauce that isn’t too runny and coats everything perfectly. I served my dinner with some shop bought prawn crackers and Blue Dragon sweet chili dipping sauce. All in all this dinner would have cost me under £5 for two people, took me less than 30 minutes to cook and really was a little bit of the orient in my own home. Cooking fresh like this is great for us and I can’t wait to do more of it. So long takeaway, I have my own burst of flavor in the kitchen!
